I think what you're saying could be true for martial arts, one could know and understand fighting without having formally studied it or even trained for it. I believe this is demonstrated when animals and people manage to fight off attackers effectively even though they never "studied".

As for critical thinking, people do apply logic without knowing the names of the various fallacies, and often use deduction and induction.
