I use my right index finger for b.
if you angle your hands inward b is equidistant to both index fingers.
And since I type dvorak (so it's actually x for me) I prefer to use my right hand as the left hand will type the next (most likely) vowel letter.

I learnt and still use dvorak since I never learnt to touch type properly on qwerty.
The feel of home row based layouts is just so nice.

why would you move R and E?
also you can either switch keyboards in windows or on qmk. A lot of modern games just use keycodes anyway so you don't have to switch.
