If you're looking for unbiased benchmarks check out Daniel Owen for gpus, Techpowerup for specific games. Occasionally Digital Foundry and Level1Techs will post a review, usually of high end parts. Hardware Unboxed is basically a shill channel at this point.
5060ti and 5070 are the default midrange options this gen. In the United States AMD has made zero sense for the last couple gens.
5070ti if you're playing at 4k, you fell for vram hysteria, or want to sit on the same card for a decade. PS6 will maybe be compared to a 5070 absolute best scenario, they've already signaled the intent to keep the next console cheap.
If you were the audience for the 5090 or 5080 you wouldn't have to ask for advice.
For processors right now in general it's an am5 x3d, Intel 13600k/14600k/265k if you find them discounted. For "real work" things can be more complicated.
