I can vouch for the REGULAR "Director's Cut" and the Nintendo DS ports of RE1 though. They're good.
RE2-3 are arguably the best on Nintendo GC, but the PC port + Seamless HD mod is stellar.
If you just want to play them ASAP, the recent GOG re-releases are easily available.

The classic RE1-3 are timeless masterpieces, and absolutely must-play. And replay; that's something most modern AAA slop completely lack.
And yes, you REALLY should play the OG 1996 RE1 as well.
Preferably before REmake, as it was made for the veteran RE-fans, by the OG devs, who then changed things there and here to play mind games on the players. Skip the classic trilogy, and you'll miss all these cool alterations.
RE1 1996 also has way more open-ended gameplay, with more alternative scenarios and endings, and it's overall more fun to play if you ask me.
The recent RE-engine DE-makes are irredeemable garbage. No way around it.
Instead, you should play the older spinoffs, such as Outbreak and Dead Aim.
Continue the vibes with Dino Crisis 1-2 and Silent Hill 1-4 (originals), and maybe Fatal Frame.
