If the Knight wanted to take Toriel so bad, it wouldn't have fucked around with us or done that slow hand suck move, it would have just taken her the same way it did Undyne. It didn't care about taking Toriel, it cared about taking Undyne.
That's why it had Kris not only open the Fountain, but also get Toriel to call the police first and left the door open. It was so Undyne would show up to get her ass taken out. They knew it'd go down that way due to the prophecy (which we haven't truly diverted from at all in either routes).

It also makes way more sense that Alvin opened the Chapter 4 Fountain. He was specifically talking about the hammer at the grave in Chapter 2, then it suddenly is in his desk drawer in Chapter 4.
And Ralsei says that a Darkner styled after a loved one only appears in specific darkness, implying the personal connection has to be strong. I imagine magic Dark revival needs a stronger connection than "the teacher you had years ago". Alvin being the one to do it specifically to see his dad fits perfectly. Yet he's nowhere to be seen at all, and the Knight is clearly looking for someone the whole time. It's really not that much of a stretch to assume it's Alvin here.

You're assuming it's after Toriel at all.
The first time it clearly wasn't trying very hard to take her. We saw how fast it nabbed Undyne and bolted. Trying to take Toriel seemed like more of a feint to bait the heroes and Undyne with.

And in Chapter 4, it's clearly looking for something or someone, and everyone just assumes it's looking for Toriel.
But what if she's actually there looking for someone else, like maybe Alvin? The guy who really should have been present in the chapter but never showed up.
He even seems to be the one that dug up his father's hammer and put it in his desk going by the dialogue from Chapter 2. Maybe someone convinced him he could see his dad again if he did so and opened a Dark Fountain, but when he did The Knight ran in and tried to grab him too, but it couldn't find him.

We're 100% going back to the Church tomorrow morning to get the Recruits
