For the inventory, it definitely helps to pick up every chest you find while exploring (or just craft them, they're cheap and iron is everywhere), and slap down a bunch of them in a dedicated storage room in your base. There's an option to rename the chest when you're in its inventory so that you can kinda get a basic sorting system going, and you can just hit the auto-stack button located at the bottom-right of your inventory to dump your inventory directly into your chests when you come back to base. You can alt+click items in your inventory to favorite them, so that they don't get sucked into your storage chests.
I also highly recommend crafting the Void Bag, as it gives you a 2nd inventory. If your normal inventory is full, any new items you run over will be sucked into your void bag

Unfortunately I don't think you can just using in-game tools, you would've had to have made a template beforehand. That said, I think you can grab the exact colors from an existing character if you upload that character save into the inventory editor in the OP:
