Why exactly does it matter if you're just testing out a new build? Is it that much different if it's an Emerald 4 player you're laning against compared to a Masters player? I feel like if you're just gauging new items' value and worth that hinges much more on your performance than it does any other aspect of the game, including whoever any of the other players are.
For a more direct example, if you feel like trying out Archangels Rylai on Seraphine or something - why does it matter? You might have a harder time landing spells on the Masters player but that's irrelevant in the context of "trying out a new build" - you're going to be doing the same damage and seeing the difference of the items on your end regardless.
