If they had left it at one season it would've been very fondly remembered and had something of a cult following. It would be one of those goofy 'how did they get greenlit' type of shows. They were clowning around, the dialogue was actually quite free form, the animation was more charming and the episodes were discrete and amusing in an absurdist way.
It was turning it into a series that totally destroyed it. Everything became standardised, dialogue became rigid, animations pre-fabricated, episodes churned out to fill a quota and the inclusion of an abysmal overarching narrative cemented its place as one of the biggest drop offs in television history of all time. It is now utterly unfunny, not even in an ironic way. Everything feels forced, the majority of episodes feel like clip shows even when they aren't. Scifi tropes aren't deconstructed and explored as much as they are blandly incorporated while a veneer of intellectualism is plastered over justified by a character saying something stupid like 'eerrrhhmm, guys, are we *really* doing this??'.
I tried watching some of the newest season. I got to the end of episode 3, hadn't laughed once, hadn't even smiled or been amused once, turned it off and haven't looked at any episodes since. There are no jokes any more. It takes itself far too seriously. The ultimate irony is that Rick and Morty in season 8 is arguably the exact sort of material that Rick and Morty in season 1 would've had a great time poking fun at.
