Oh, Mr. Anon. Being a windfag has nothing to do with if one enjoys western characters or not. Windffaggotry is about how Mr. Sonic, Mr. Sonic the Hedgehog, himself is characterized. As long as fans of Western Mr. Sonic Original Characters respect this and don't butcher Mr. Sonic's characterization to fit their Western Mr. Sonic Original Characters (i.e. Sonally,, an anti-wind ship), they can qualify for windfag status. As long as they are shown to consistently prefer in-character depictions of Mr. Sonic the Hedgehog and argue against out of character depictions of Mr. Sonic the Hedgehog, they too can be windfags.

All Sonic Ships are incredibly suspect. Especially if they're supposed to involve a traditional heterosexual romance. But ask yourself this. "Does this character want to anchor the wind?" The answer for Amy, absolutely, yes. The answer for Sally, once again, a resounding yes. Does Tails want to anchor the wind? No. Does Cream want to anchor the wind? No. (Unlike Amy, she's an actual girl who loves Adventure. As shown by her Sonic Channel characterization. Cream is what Sonamyfags wish Amy was. This is why Sparky seethes.) Does Blaze want to anchor the wind? No. Does Rouge want to anchor the wind? Ding, ding, ding, not a chance. Characters who want to anchor the wind are antithetical to it and thus any entanglement between Sonic and them requires Sonic to be out of character.
Shipping is inherently suspect given how it has been used to encourage out-of-character Sonic characterization, storytelling, and fans, but certain ships are far more tolerable from a wind perspective than others.
