When did anime stopped being deep like it used to be in the 90s and early 2000s?

I miss when deep animes used to be a thing (see also, Ergo Proxy)

There's a lot of anime that doesn't rely on using this kind of "comedy", that has a more deep approach to their storytelling

FMA 2003 was much better, more like its contemporaries like Monster and less pandering shonen trash like Brotherhood or Demon Slayer. I miss the 90s and early 2000s
