I think the biggest appeal of viruses is that they narratively shorthand that there is nothing except zombies that are unique to the setting compared to real life. Less “baggage”. If a wizard makes a zombie curse, then you have zombies, but also wizards, and presumably other magic. If its an indian burial ground then now indians are magic and in a setting that lasts longer than an hour of media, indians being magic will have to be addressed. Magic zombies are fine for magic settings like warhammer, or short movies like classic zombie flicks, but for a long book/comic series or a 20 hour long video game, “zombies without baggage” is often preferred.
