It's a roguelike, you keep doing runs to see your cute hors win and to have numbers go up, because at the end of a run you have a chance to get genes on various categories, which include stats. So you want to farm for that. Once you have the good parents you are gonna work from an higher base statline, which means you can do more races instead of training and certain races come with genes that also give you more stats. The skills an horse learns also have a chance to become a gene so it goes on and on. It is giga grindy, but the gameplay loop itself is aight.
Also there is the fact that you are also making horses for two types of pvp, the normal one where most of your income comes from and is fairly easy (at least back when I played in JP) and then there is the special periodic pvp where there are big dick rewards and where you have to make 3 horses for it. You also know the characteristics of the track so you can minmax autism the shit out of it. It is a lot, and this is before the new scenarios that change how the game is played.
But really, the numbers go up is the biggest factor of people autisming.
