Because mecha games have a design issue where they are either too mechanically detailed to be easy to make or pick up AND they don't represent people's preconceived ideas of what they want.
Armored Core is the most popular mecha series of all time to casual masses and even then it's niche, because FromSoft saw limited success with it compared to their other franchises. Meanwhile, because mecha struggles with the identity crisis of what they want to put forward in their games.
If you played SRW and saw one of your favorite series, is that what you really want from the game? Animated fights with some dialogue referencing an episode of an anime? Then you have the issue of "Okay, I want a game that plays like the mechas are in the show" but then how do you design that around a dedicated game? The platinum transformers game is pretty good, but is that what you wanted? A 3D combo marathon game with a transformers skin?
Even still we need more mecha games. I'd love it if some popular IPs made self-contained games with their own narratives and world to use as a backdrop rather than be another reference again. But of course, making a niche genre of game for a niche genre of entertainment? How would that sell well? It would be easier if we lived in the PS2/Xbox/GCN climate of lower budget games made for shows.
