I want a city/settlement builder that actually accounts for the ecosystem/environment impacts beyond their affect on humans a la Cities Skylines pollution and noise simulations. I want erosion where forests are clearcut, swarms of pests where diverse ecosystems are replaced by monoculture farms, heat islands and lost groundwater where earth and foliage are replaced with paved surfaces and buildings, pollinator and wildlife populations reacting to lost habitat. Take all that and give the player tools to mitigate/compensate for these effects. I'm an architect who reads about this stuff in my free time so maybe it's a game for a tiny niche but it could be cool. Lots of options for building with materials that can be locally sourced and building styles that suit the environment
