Pizzas and pies were always merely edible vehicles for the toppings. The idea was that of cheap dishes to serve food on, the dish being edible if the client was desperate enough was merely a bonus.The idea of an intentionally edible pie and pizza is a modern creation created by better sanitation standards, ease of access to ingredients plus materials.

Granted there's a dish which popes would call pizza that amounted to fancy sweet bread. But I wouldn't call that a real pizza.
