Because Demerzel and Nova got a spotlight. Getting a rematch with Zonda when she's got a grasp on her octima would be badass. We'd get to see her ideals refuted or her questioning herself, which is much more satisfying than just offing her. She'd also get a shot of ripping into GV like the other bonus bosses. Also, she's just a cool character.
