Depends on your GPU but most of them range between 65-85C under stress. And yes, all GPU's have a safeguard that will reboot your system if the temps go too high.
Nothing to worry about really but if it generates a lot of noise you should look into the settings to create less stress. Constantly having high temps does have an impact on the longevity of your GPU. Capping your FPS, don't use RTX or lower RTX settings, stuff like that.
