As for gearing it depends. There's the random bots in the world that just auto-equip new gear whenever they level up. Though you can create playerbots from characters you make on actual accounts that can gear up through questing and doing dungeons/raids.
Professions and gathering I don't think they really do yet. Though to solve that there's an auction house bot module that simulates an actual economy as if they were gathering and selling shit on the ah. So you can still buy and sell stuff like normal.

I'm just a retard who follows guides and presses buttons and was still able to set everything up without issue. So I can appreciate azerothcore for that.
