So Grey Knights, they are 8 brotherhoods with the Purifier and Paladin orders staying on Titan to guard shit. But the two kits for the Grey knights are named after and are these two orders even they its the other 8 that do the fighting? And the Paladins and Purifiers don't leave Titan, like the old custodes lore of never leaving the Palace. Why did GW make this decision/ how does this work? Am I being dumb and missing something?

Generally most Tacticus units are more support oriented. The melee units are killy but can't charge properly
So you're left with Hellblasters, Infernus or Sternguard. Sternguard and Hellblasters are really good but they need a character and the Drop Pod only has 10 so you can't get a shooty-killy unit either. The best you can get is 4 Devs with Multimeltas, but Meltas suck ass this edition, and Lascannons have range.
If you're just staging, scouts do that better.

How do you guys get around painting models youโre just sort of neutral towards? I like specialty Marines with unique armor like Terminators and Bladeguard, while I find it hard to get motivated for just regular dudes. What I mean, is that when I noticed myself getting quicker at painting Hellblasters I would think โCanโt wait to get this over with,โ while with painting Terminators quicker it was โCanโt wait to paint more Terminators,โ Only asking cause I want some more regular Marines for gameplay purposes, as the solution is pretty clear otherwise.

Necrons have personality, and would build empires and go on existing. Chaos has personalities and the Dark Gods would continue interacting and fighting and some corrupted souls would live on and be able to gloat that they were the winners.
But Tyranids would leave the entire galaxy a completely empty, dead, silent, lifeless husk and then fuck off forever into the blackness of space. They wouldn't celebrate or revel in their glorious victory, they would just move on like the embodiment of cold entropy that they are. All the struggles of humans and orks and eldar and chaos cults rendered meaningless and completely forgotten. This is the only thing that explains the final line of text in the iconic opening words of 40k:

Almost nowhere else in the 40k canon does it ever mention the universe at large, it all takes place in our galaxy.
