In the game, it is possible because the game uses "attacks" as short hand for "declares an attack". Because the game happens in stages, it is possible to skip the declare attackers step and still have something attacking during the subsequent steps.
That's where the fucking ambiguity comes from, something that is not possible in real life is possible in game because the mechanics work a very particular way. In other games there is no such distinction, in Magic there is.

If you remove on curve, there's probably fuck all your opponent can do about it. If you hold removal until the nanosecond it's necessary, that's when your opponent is going to have some bullshit to counter your removal, or deflect it, or do something to make it miss, or any number of things that can happen in this game.
It is not a high IQ move to hold removal on the assumption that it will always go through, it's actually incredibly low IQ.
