Well, the best place to start is setting it in the desert, unless you want to take the Sinbad route and go for an Indian Ocean thing. Also, are you using Al Qadim? It and its supplements are a good place to start.

I mean, if you're playing D&D, then Al Qadim is a good tool. If you're doing GURPS, then there's the Arabian Nights supplement book that's pretty much a textbook about all things Middle Eastern. You could also try seeking out games with a distinctly Arabian/Turkish/Indian setting. What game are you playing?

Probably GURPS, run with GURPS Lite rules and an emphasis on roleplay over crunchiness. This way, you can focus more on worldbuilding using both real-world and fantastic Middle Eastern tropes and cliches. Think somewhere between Barbarians of Lemuria and full GURPS in terms of d6 crunch/mechanics, but also aspects of Tales of the Caliphate Nights or Crescent Empire for 7th Sea for influences. But that's just how I'd do it. A d20 system works just as well, meaning you could also use Southlands or back-engineered Al Qadim for D&D 5e play.

You could. Change the names of countries to fictional ones, go for more of a "genies and flying carpets" approach than a historical one, and perhaps take a page from modern 5e and encourage more player agency (they have fun, you have fun, everyone wins). There are also cultural mores that guide lawfully-aligned characters, from sacred hospitality to religious devotion, that can allow for self-imposed challenges for players. Of course, you have to let them know about that. Basically, D&D with a few terms changed for a Middle Eastern flair.

I guess I should ask what no one else is asking - do you want something authentically Arabic, or just exotic Orientalism? Nothing wrong with that, but we'll send you down different paths depending. Arabian Nights itself has a bunch of Chinese stories in it.

No Taverns instead Shisha/Hookah lounges, Coffee and Tea houses(often all three are available at the same type of place) enjoy.
Alcohol can still be found but its more kept on the down-low, so you're more likely to have wine offered to you at a noble's residence tthan you are finding it sold in a public establishment.

Not sure if prostitutes are gonna be relevant, but if they are you could go with some doing 'marriages for a day' to skirt he rules wih their clients. considering its DnD you could even spice it up with them using the opprtunity for a daily ceremony spell for some buff.

Holy Water could not be just made by holy divine magic users but could also potentially be sourced from springs that are holy sites, pssibly being created by some gods themsleves.

Hyenas(specifically striped ones) are a pretty decent replacement for wolves, be it as pests you guard your livestock from, or in the context of Lycanthropy with werehyenas being the thing to beware of. Though in contexts of a fantasy story where undead are a comon thing, you could also connect them as enemies as Hyenas are known to scavenge human corpses and attack gravesites.

You can also include strong clan structures with large extended families. This wouldn't just be one guy with lots of wives and tons of children, but real extended families with many cousins of various degrees, uncles, great uncles and the like just being pretty connected
These clans exists across all types of society, like you find noble/rich merchant clans, you find organized crime families, and even various peasants like that, some even known for producing a lot of soliders and the like.

Aladdin for example is definitely either a middle eastern story or a european story based on middle eastern concepts.
Setting it in china is just window dressing, to imply it takes away far away in the distant orient none of the readers know much about.
