When I was a teenager / young adult, I would try and hide it and even feel embarrassed in the toy aisle, but now it feels like a societally acceptable adult hobby and now that all the people that grew up playing with Lego are now adults.

as far as I can tell, Lego does NOT continually make things. they set the machines up, make X amount of a set to fill the warehouse, and reset the machine for the next thing.
maybe there are some exceptions where they didn't expect to sell so many of something, and they re-run something (Lego Movie 1 sets vanished and needed restocking?) but they have so many new things to make, stopping the machines to re-make something is double-costly for them since it now stops the new thing from being sold on time.

For the most part most of the non-IP sets are evergreen, however if they include certain molds that aren't readily available they can become a more limited run. Also cost to market comes into play, they won't go through the effort to make any more of that set in particular when they can reuse the red panda mold and sell it in a 40$ set Dreamzzz. There is also no aftermarket demand for that set either, you can literally buy it NIB for $5.
Ideas in particular are generally created and sold out as is, for the most part the demand doesn't warrant needing to make any more except in certain cases, Central Perk for example.
Some even end up with different SKUs and branding, Disney 100.

The problem with alt brands is that they rarely do their own thing or even play sets for that matter. It's mostly [18+ lego set] but NotLego(tm)! Almost no other brands have their own themes like Dreamzzz or Ninjago, even simple stuff like fantasy castle is absent. If I just wanted some random MOC I'd just go to rebrickable.
Mega Bloks had the right idea with Dragons and Pyrates but that was decades ago and no one has replicated it since.
I'd gladly consoom other brands so I can give the finger to Lego but no one is making stuff I'm interested in. The only exception has been that viking longboat house but only because it goes well with Lego's Viking Village and doesn't really hold up on its own.

remember when they released that big castle, and not too much later, the Lion Knight torsos and legs DID show up in the build-a-minifig bins? and in such quantities, that you might still be able to find some today.
