Plenty of good food options in Chiang Mai, both local and international, with price range 40 to 2000+ thb per meal. There are both hot springs and cool springs in the driving distance from the city. Hiking up the waterfalls is nice. Doi Inthanon, the highest mountain in Thailand is in the driving distance. The mountain itself is underwhelming, but there are some nice hiking trails in the vicinity. Rafting/kayaking down the Ping river is a good experience. There are also many caves, including cave temples. There are also elephant sanctuaries if that's your thing.

In all my travels around SE & East Asia, I find this only applies to Thailand and Japan. Every other Asian country you can predict and logically assume the thoughts and behaviors of the locals through causation and situations. I find China and Vietnam to be the most transparent cultures, i'd say Cambodia and Myanmar are similar but in a more monkey way (it's really just about $$$).

Thailand and Japan just has this weird other "face" superimposed on their real face that blurs their words, actions and intentions. Japan is under-hated, really. Thailand gets the brunt of these criticisms because its a third world monkey adjacent country, but they mitigate that from deluding farang with their smiles and courtesies.

As I earlier mention, China is by far the most transparent and logical-outcome culture. Therefore, you should observe how the Chinese deal with Thais, you wont ever have their deluded love stories or rug-pull relationships with Thais, its cold hard transactional business layered with uneasiness and mistrust. Westerners fall victim to many scams because we carry these concepts of goodwill and charity that are not shared with us while in Thailand.
