I have a 24 hour connection in Santiago Chile. How are the hostels? What can I do to enjoy myself on a budget without being stabbed and robbed by some latinx? I'm a 6'1 ginger gringx that can't speak Spanish. Plus I have a fair bit of cash with me for my actual trip. What's my play?

I don't know but be careful, my friend had his taxi hijacked in Santiago and was forced to transfer money out of his bank account at knife point.

there are good hostels by cerro santa lucia, which is a good part of the city to stay in, close to the museum, the market, the plaza de armas and the riverside park, koreatown is also near there and the party street (both on the other side of the river). neruda's house is also over there

Chilean here. DO NOT take any of the taxies that are just outside the airport, you'll be robbed blind, book one at an official booth inside the airport itself, make sure you're getting in the cab you paid for. Avoid taking any taxies parked just outside any major shopping center, just walk a few blocks away and take one there. Do not walk on your own at night in downtown Santiago, Bellavista or Parque Forestal, venezuelan gangs operate in the area.

Would I be mostly fine if I just hire a room at the hotel at the airport and if I go out hire a cab to the old town with only my phone and like $50 in cash?

I would book a room anywhere near Providencia, it's generally very safe apart from Venezuelans stealing mobiles on their motorbikes so be careful when you have yours out near a street or if you see a guy riding a bike in the pavement. Then from Providencia to the city center is a short subway trip. Be mindful of strangers trying to stop to you to chat, someone might come from behind and pick your pockets or snatch something from you. Crime is generally non violent around those parts but things change at night, so I wouldn't be there once it gets really dark. If you do get a cab always check the taximeter and see that you're charged accordingly (scammers will add an extra zero or so), you're not supposed to negotiate the taxi fare (scammers might also quote you a higher price or tell you their taximeter doesn't work). 50 (USD?) should be enough for lunch and dinner. I think you'll miss out if you just stay near the airport, Santiago is not that dangerous.

Uber is in a legal gray zone so many Uber drivers won't dare going to the airport because there's a lot of police and they could get a ticket.

Santiago is chill as fuck unless you go full retard. Book a night at the estacion central Ibis, take a official cab from the airport to it and feel free to explore. The entire area is covered by Police(that you can trust) and as long a you just move east toward the skycostanera it's comfy. At night just use the subway or a taxi from a official stand.
Yes you will encounter homeless and beggars but it's just the threat level of Berlin or Phnom Penh outside the palace district.

Santiago has gotten more dangeous, but to keep in perspective, it is still safer than Dallas, San Antonio, Houston, Phoenix... let alone Chicago.

You need to stop being so paranoid about South America, Fox News has brainwashed you. Just follow the normal precautions people have said in this thread, you are only gonna be there for 24 hs so what are you whining about.
