Ive never travelled outside of Europe and now I'm finding out that other countries collect your fingerprints? What the fuck. I don't want to go to Japan anymore because I'll have to go through china. Either of them having my prints is wrong

Modern passports have embedded biometrics, including your fingerprints. The scanners at the border check your fingerprints match those stored on the passport. They also have your face print, and cameras check those.
You can't really avoid this unless you have something other than a passport or a really old passport maybe

not every biometric passport includes fingerprints. usa, uk and most european passports don't (a few do).
however if you are worried about it you probably shouldn't travel. in saudi arabia i had to give my fingerprints just to get a fucking phone sim

if you knew anything about government IT systems you'd know that they are more likely to tell you that they do store your fingerprints when in fact they don't, because the server where the fingerprints were stored caught fire and there were no backups
