I really dislike the bunch of Stormtrooper variations they made for Rogue One and Solo, with the exception of the Mimban Stormtroopers.
Old expanded universe did also have tons of Stormtrooper and clone trooper variations but at least they were recognizable as permutations of the original designs.
I would have preferred if the combat driver troopers were just up armored AT-ST drivers, sort of like the ones seen in Rebels, and if shore troopers could have just been beige scout trooper recolors with some regular Stormtrooper armor pieces thrown in, like a sort of a nod to clone scout troopers.

I think it’s more to do with the empire having less money and influence to turn out real storm troopers, it’s only in the beginning the 501st were still real clones and fucking up everything in their path lead by vader. But with any war the success come manpower loss and externalities that even caused the decommissioning of Kamino. The administrative challenge of guarding the whole galaxy made them start recruiting regulars as storm troopers and eventually forming entire armies to keep pressure on lesser or far flung conflicts.
