you can literally see windows and skylights are entirely possible

this is true: groundwater and damp would be a major issue for a home like this
the solution would be having a ventilated cavity between the earthen layer and the interior wall; any home like this (and any home period imo) would need an air system
that would also make the temperature very regulated and comfortable all year round even without active heating/cooling

I would think you'd want a minimum of 3 but up to 6 guys. 6 guys in pairs of 2 working 8 hour shifts seems ideal.
