Sopranos is a Santa Barbara tier soap opera, that's mostly boring white noise outside of some quotable scenes. People also praise HBO for some sort of amazing direction, but the show is extremely sloppy in that regard too, and often looks borderline like a sitcom.
Breaking Bad is more dynamic and there's some style to it, but it's the opposite extreme of Sopranos in narrative being basically capeshit, a lot of insane contrivances that are there just to either hammer in an obvious point or make an asspull for le epic character moment, like Gus dodging them bullets.

You probably haven't watched it in a long time but the sniper was a cartel rep that was sending a message rather than trying to assassinate Gus, if you remember - the Mexican cartel were disrupting the supply chain by killing drivers and stealing meth from the trucks. It's only hinted at in the show but he is likely related to a very powerful cartel in South America that the Mexican cartel were wary of.

Here's my take. He's a druggie who gave himself mild schizophrenia from using drugs, he's also a closeted gay guy which clashes with some of the Christian/right wing aspects of his personality, if I had to guess he's had a few gay experiences, this might be what led him to become more religious, he might be praying the gay away.
