They were arresting him, not assassinating him. And the Jedi is an arresting body in the Republic so if they have probable cause they can arrest. There is nothing illegal about that.

If Palpatine felt the charges were bogus he can get representation and argue that to a judge in whatever the arraignment equivalent is in the star wars universe, I mean know the republic has a judicial system so it's not like getting arrested is some death sentence. If the charges are shit, a judge will dismiss it the moment it's reviewed. There was no need for Palpatine to chimp out and behave like a criminal nigger (unless he was actually guilty and the charges would stand).

The whole point of the prequels is to show the republic was full of shit, the Jedi were another military arm of the republic and everyone was so stuck up their ass they couldn't see a savior if he were standing under their noses. The Jedi did as much harm as sheev in the making of vader.
