Terminators are programmed with knowledge on how to destroy Terminators. He simply extrapolated from his existing knowledge of what could destroy him, something he could do as a thinking computer.

It was really dumb of Arnold to shatter his frozen body with a bullet though. If he just left him whole it would have taken a lot longer for him to thaw out.
