Why don't any of the live-action Death Notes do the manga/anime justice? WHY? It's the best cat-and-mouse story in history. How can you fuck it up so badly?

The anime is extremely contrived; it has to be just to have a chance of how Light could ever lose.
Having said that, the Japanese live action films (first 2 at least) are pretty good

Anime fans are just way too involved in that shit. Whenever I visit /a/, I'm saddened by the level of mental illness on display.

"The idea of retelling the same story seems crazy to me" - writer of Netflix's Death Note

It didn't help that the writer and director didn't understand Death Note.

I semi agree with this.
If you're any sort of artist, it would be quite boring to just remake something but (in this case) live-action and in English just for the people who refuse to watch cartoons or foreign-language shit.
Especially with a story as tight as Death Note that's really written for the long-term payouts that come several episodes after a seed is planted.
But at the same time, you have to commit. And they didn't commit here. They didn't use the premise to tell an interesting but different story. They told the same general story but worse with shitty-written characters, condensed into an hour 40.
Also, it should have been obvious that the writer/execs were fucking retarded when they called the main character "Light Turner" as if that made his name natural sounding in America
