There's really not much to get. Star Trek, TNG, and the films created an interesting setting and DS9 is a story set within it.
If you think Trek was all about flying around space in a starship, well, you're just wrong. It was always about the stories, from the very beginning (The Cage). Exploration was just a means to an end to arrive at those stories.

What are they exploring in Court Martial or Measure of a Man exactly?

Some of the best Star Trek stories are bottle episodes where the crew doesn't even leave the ship so I've always thought that was kind of a silly distinction.

That's how Gene sold it to NBC, as Wagon Train in space.
Then he brought in The Cage and the NBC executive was furious and told him it was too cerebral and needed more fist fights.

Either way, just because TOS was Wagon Train, that doesn't mean a spin-off show couldn't be Gunsmoke in space. If Wagon Train had a spin-off that was set in a town and both were westerns, do you think anyone would've really said "this isn't REAL Wagon Train!"?

I'd also argue that shit like the inner light is peak television. All good things is also one of the greatest finales of all time that captured everything that made trek great, and closed out an era (sure DS9 was ongoing, but it was doing its own thing, and voyager was still a few years out).

>Odo

When Nog (the best friend of Sisko's son) wanted to join starfleet, Sisko tested whether Nog would steal from the cargo bay. Nog not only passed the test, but did so in record time. Sisko still refused to endorse Nog's application until after Nog disavowed Ferengi culture, saying that he didn't want to be a "good Ferengi".

This humiliation ritual pleased the Sisko and showed him that a house Ferengi or two can be tolerable as long as they undermine traditional Ferengi values and drink root beer.

Sisko explains himself very well here: cultural diversity ends the moment you put on that uniform and become part of the military hierarchy.
None of these people were drafted and they all knew what they were getting into.

Picard letting Worf off for killing someone outside of the line of duty was incredibly unrealistic and unmilitary. Even moreso by Starfleet's anti-violent philosophies.
There's no way Picard wouldn't be court martialed for letting Worf off with a simple reprimand.

It has the best cast of alien characters of any trek.
The writing is at least on par with TNG too.
There is more of an over arching plot but the vast majority of episodes are mostly self contained, but the characters also have a bit more room to grow because of this.
It's not flat out aping TNG like Voyager did, it is it's own thing, but it still understands TNG and builds from it.
It breaks some trek rules, but it understands those rules and what breaking them can achieve, unlike modern trek who just pisses on the rules then sets them on fire to... err I dunno why they do that actually.
