I did some more reading after watching it, and some think he re-shot the movie because he wasn't happy with it and used the story about the film stock being ruined as an excuse. The original DP he replaced had said in an interview that Tarkovsky wasn't ready for the movie (I took as didn't really understand it) and couldn't see where it was going and he told him to re-write the script in a way that makes sense to him, but he got angry at him about it. But who knows.
