He only ever wore a cap in he pilot and then never again until his last scene. So it's significant that he'd be wearing a cap in the same season they make a big deal about baseball caps being secret recording devices.

This makes sense because they make a big deal about baseball caps in S6. However, Chase is not the "leave subtle clues to foreshadow a grand payoff" filmmaker. The show is inconsistent with tons of retcons, dubbed lines, dropped plots, etc throughout. Yet people believe he randomly became Kubrick S6. There are tons of weird moments where the camera fixates on something that end up being inconsequential and rarely talked about. There are also contradictions of widely believed clues throughout that are also ignored.
What happened is he put a ton of red herrings in the last season to make people come up with theories and create buzz around the show. He then teased/played along with the most popular theories years after the show to keep people discussing. It was a genius marketing move by Chase that continues to work to this day. People only ever consider a handful of red herrings when discussing their theories about what happens off-screen and ignore all the others, and even ignore moments when those perceived foreshadowing scenes are contradicted a couple of episodes later. He didn't know what happened in the show himself until he saw what people wanted to believe the most.

S6 Tony is a piece of shit due to how disillusioned he becomes with the possibility of having Chris relay his order after the Adriana mess. He didn't trust him enough to risk his revenge, plus his addiction made him unreliable. When he thinks to do the same with Bobby, the Monopoly incident happens, due to his lifelong grudge with Jannice. Therefore, he starts feeling more and more isolated, doomed and starts coping with gambling and becomes harsh and outright disrespectful with his men. Even if he survived the shot and promised himself to enjoy life, he feels like the clock is ticking and can't but stare into the abyss that is the end of previous bosses.

I agree, it's highly conspicuous. Yet there's no evidence Chris ever trafficked drugs like Pussy, or that he was ever contacted by authorities to become an informant. This was yet another tease in S6 to make you think something was happening which never gets confirmed or resolved. Just like when the Frenchman tore off a piece of Bobby's shirt. People give meanings to these scenes because they're highly conspicuous, yet there's no substance to those theories. Inciting this type of speculation was Chase's way to make the show end with a huge bang and live on in discussions years after its end, which it certainly did.

One thing Chase does with The Sopranos is use mob movie references to leave clues for the viewer. For instance, when Tony dies in the final scene, he dies in the exact same fashion as the execution in the restaurant in Godfather 1. And, of course, there are a ton of references to Goodfellas as well. The Departed references in that final scene are fairly explicit. But anyway I don’t know if it even matters if Chris flips, what Chase REALLY wanted his to see is Tony is fucked no matter which way he turns. If Chrissy didn’t flip, well, Carlos did (for drugs), and he’s made enough enemies in NY to be taken out by just about anybody.

That scene is confirmed to be Tony's all time favorite scene, and Tony was obsessed with movies, always watching old movies at home.
The last scene is the biggest red herring of all. Tony teleports to his seat with the jukebox music playing uninterrupted and then eats onion rings which he can't for medical reasons. The diner is full of old film archetypes like the random table of boyscouts, a stereotype 1980s movie mobster, hopelessly in love couple, and stereotype urban gansta thugs. This is because Tony's head is filled with movie and media references.
Then the outdated stereotype mafioso goes to the bathroom to act out Tony's all time favorite Godfather scene. Obviously all these things go ignored by most viewers who only fixate on the few red herrings that support the mainstream theory, which Chase only teased as being accurate years after it became accepted.

I think you’re saying we are seeing his imagination, which is an interesting thought. But as someone else pointed out, we see the final scene from Tony’s perspective, same as the very first scene in the series, the clues go all the way back to the very first scene that he dies. It’s suggested Paulie will betray him as early as season 3. Etc. all the clues are there.

Chase did not plan the ending from the start. The show is full of retcons, dropped plots, random characters appearing, and other shit suggesting there was never a vision of what the end was supposed to be. All the red herrings start in S6 when he knew it was the last season. I am not saying the last scene is a dream, but that he dropped hints toward that conclusion just as he dropped hints toward many others. You're saying Paulie betrayed him but others think it was Patsy because of the way his wife pawed at Carmella's china (another red herring)

The shots of Tony's face to his POV are actually more consistent with other dream sequences in the show. The real life scenes rarely use that device but dream sequences are constantly set in that paradigm.

This is just a general summation of the series. Tony and his guys are all obsessed with mob movies and cheesy imagined ideas of what America means. But instead of working hard and plying a trade like their ancestors, they all sit around on their asses being stupid parasites, occasionally having to rough up or kill someone. Tony wanted to be like the cool slick gangsters from the movies, conveniently forgetting those guys mostly die violently or isolated and forgotten in their old age.
