I want to set a few things straight. What you see here is not an HDMI cable, it is in fact a dual link DVI cable. Meaning, the sound is going over a separate cable, that would be the TOSLINK cable, an optical cable over which signals are transmitted using a Differential Manchester encoding. Nothing too fancy, but it is reliable.
As you can see, there is no "subwoofer" and no "surround" setup. Loudspeakers are a complex set of nonlinear equations to optimize for as it is - and that's true for even ONE speaker with the most trivial D'Appolito setup and with low slew rate crossovers. Two speakers will already introduce QUITE the challenge to optimize for a regular room, given the reflections and room modes created by them. No need to introduce another piece of (considerable) complification by adding a subwoofer. Moreover, you will find that my Tannoy Lancaster speakers already pack quite the punch.

I tried nuking it and starting over, was still getting the same issue. I think it just didn't like something with the hardware it was running on, Xeon 2660v3 and AMD 6600XT. Was just a basic Ubuntu server install as well. Had all the prerequisites installed as well. I spent around 4 hours trying to track down the actual issue but just went back to Plex. This was a few years ago so it might be fixed by now.

I had a syncing problem like that on Plex.
I fixed it by slowly adding the library, so I did it 5 folders at a time. If it was a series I'd do a season at a time.
I have fiber 450mb upload, so it's gotta something on their side.
I found this fix posted randomly. You later set the metadata stuff after it's all synced in else that can bug it too. Might be the same for Jellyfin.
