The retards calling it a comedy are wrong. The word they want to use is 'relatable', especially if you're a guido from a city in blue America or you've had experience working at a place that's a total mess.
Half the people clapping at the 'humor' are watching it like the white immigrant family version of a minstrel show.
All in all if I had a magic wand I wouldn't have ever had them try to make it a fine dining restaurant and instead followed the premise of "what happens if you run a dumpster fire hole in the wall restaurant as a french brigade?".
Then just land the big three arcs (Carm, Richie, Sydney) and have a decent ending where fancy chef sydney visits the gang years later at their thriving sandwich shop or some shit. Pure kino.
