Just went back and watched, I think this is what happened:
Sam was having a decent time going back and forth until he realized that the non-sequiturs weren't going to stop. At 20:38 Sam goes for the sheet in front of Harland because he's seeing if the bits are going to be at his expense the rest of the interview. This leads directly into the "have you ever been raped" question, which Sam takes pretty well but then returns the question. Harland then makes a joke about being raped by priests, including a mention of the crucifix and the Bible which seems to be the turning point. Charls and Nick both redirect the joke away from Christianity and toward the public school system, which is immediately shot down by Harland.
Sam becomes visibly annoyed, then Harland sharply redirects into discussing cunnilingus, and then, whether purely coincidental (unlikely) or not, tries to pull the exact bit from the Daddy Dom sketch in the Extreme Peace trailer on all of the guys in the room by asking them to "show their cunnilingus technique" on 3D printed orange objects (salmon filets?). Sam tells Damiel to not feed into it and by then he's pretty much made up his mind about the whole thing. This conversation leads directly into the gorilla nests, and Sam chimps. He tests the table a minute or two beforehand.

I actually really think that someone working with Harland told him to pull that joke on them on purpose as some kind of weird way of humiliating them. Seemed innocent enough at first but it's just too much of a coincidence for it to not be intentional.
