Don't blame them nor the EU. It is literally the only logical progression from Lucas' original story. What else do you have? The empire is defeated, then the imperial remnant, the sith and jedi are toast. You either restart the jedi and have some of them turn evil, YAWN, or have yet more Sith mysteriously come out of hiding somehow, CONTRIVED. Lucas made his "galaxy" extremely small and everything known. The only way the EU authors could bring in a new big bad was from outside the galaxy and it needed to be immune to the force to have any chance. And hell, it worked great for a dozen books. If it's not Vong, it's still something similar to them. Only other real option is to restart.

People point to gems like EU Thrawn, but then completely forget shit like Luke falling to the Dark Side and Palpatine's clones and so on and so forth.
