Robert Muldoon and Ray Arnold both die in the first movie and aren’t villains. Eddie Carr in the second movie is also not a villain and dies. Your premise has already fallen apart

Did the hunter survive? I disliked him when I watched the movie as a kid, but now he is probably my favourite character

The Indian founder wasn't cartoonishly evil. He appreciated the dino being more feral, but he made it a consistent point that he cared more for customer satisfaction and Dino quality of life over sales.

The jeet that owns the park in world dies and he is not a villain if anything brycea character is the villain and the nanny at worst was mildly negligent and she got the most horrific tortured death out of any character.
Also Gennaro although a lawyer is hardly truthfully villain hes just a flawed lawyer who wants money. Nothing he does puts anyone at risk if anything hes trying to make sure the park is safe to prevent lawsuits. I think its within the realm of possibility that if he survived all of this shit he would tell hammond to fuck off.
The villains of Jurassic Park 1 are Nedry, fucking Dobson and John Hammond regardless of how he is portrayed as a kind grandpaesque figure. Its his cost cutting, his methods, his ignorance and his refusal to pay the one guy who could fuck your whole shit up enough money so he doesnt sabotage your shit.
In the book 3 characters are drastically different.
Muldoon retains pretty much everything about himself but he is more important in the book and featured heavily. He lives in the book where he dies in the movie. Also I'm pretty sure he either fights raptors or trex with a rocket launcher.
Gennaro is someone who is more nuanced in his lawyer character however the guy is not cowardly is protective, he displays many moments of heroism, he lives and ultimately agrees money be damned the park needs to be shutdown
Hammond is an outright villain who doesnt give a shit about his grandkids who are in danger only cares about getting shit wrapped up so his park can be deemed safe. He dies having been spooked by some prerecorded dino noises causing to fall and meet his demise at the tiny chompers of JPs most adorable dino the Compsognathus. I know for a fact that when I was a child I used to be able to actually spell that name and I tried spelling that as an adult not having wrote that name since like 1990. Whatever I didn't come close this fine and I don't register that as how that is spelled at all. No Google you were wrong.

the only way a "main character" could get eaten by dinosaur is if it happened at the very end

Yeah. It was a little over the top, like he was larping a bit, but Mazrani was pretty sympathetic. "Did your general ever fly in to battle with you?". Everyone was shocked and crying in the control room when he died, he was clearly liked and respected by his subordinates.
