He's specifically been saving his prized 61 Cheval Blanc for a special occasion with
the right person. All throughout the film the analogy between wine and life has been made and when Miles tells Maya he's saving that wine she tells him those wines are peaking. He's just been told by his ex-wife, the woman he still loved and had hoped to rekindle with, that she is pregnant to her new husband. By drinking his prized wine at that time Miles is conceding his life has peaked. His novel is a failure and will not be published, his best friend is marrying and will be less available and become more distant, his newest romance wants nothing to do with him and the woman he loved has definitively moved on with her life leaving him behind. There are no more happy days, no special occasions to look forward to. Only inevitable death so might as well drink that wine and wait for death. And then he gets a call from Maya.

You're free to your own interpretation but I certainly don't see it that way. I think moving on as a person would mean that he could have spent time with Victoria and been happy for her. He cannot. He immediately retreats, abandoning his best friend at his wedding despite being his best man. I think of it as an acceptance that his life has peaked and his life is entering its bleak, winter period, hence why the very next scene has him listening to a student reading the funeral scene from A Separate Peace, mirroring his own circumstances. I think had Maya not called he would've given up on life. That wonderful moment is so full of optimism and forgiveness that cuts through the bleakness of what preceded it and I think him seizing upon that to go and see her is indicative of him being willing to move on, come what may, but when he's drinking that wine he has given up on life and he's more or less drinking at his own wake.
