It's not that Netflix is the only one making documentaries these days, it's that Netflix is the only company buying them all up and distributing them. Very few documentaries are funded by broadcasting corps in the first place then filmed and distributed after the fact. Usually small documentary teams film their doc then shop it around to broadcasters who will buy and sometimes re-edit them. For decades that was the realm of networks like the BBC and Discovery and others but now it's all streaming services, mostly Netflix.
