One aspect is that he actually let the people that came onto the show do their thing. Fallon and Kimmel are like tour guides rushing the guests from one thing to the next.

I still remember that so-retarded-it-eventually-becomes-funny joke where Tig Notaro spent minutes dragging a stool across the stage. Fallon would have pulled out a gun and shot her if she did that on his show. But Conan was like that with everyone, he just let shit unfold, which is antithetical to manufactured slop content.
