The kitchen in every restaurant I’ve worked in fucking cranks. They tend to be run very strictly with a clear pecking order, and those guys are among the first to arrive and last to leave. And they make absolute shit pay. We’re not talking a roadside diner. Professional chefs who take their career trajectories seriously work in places where they need to absolutely haul ass.

Its a function of how well organized you are relative to how busy you are. The more organized you are the more tables you can handle and the more money you can make. If you're disorganized you can get overwhelmed by a few tables, if you're well organized you can really crank out tables, if you're more organized then you need to be for the number of tables you have then the work can be easy.

It was a different job years later at a different place. I've been a short order cook at a diner and I've been a server. I'm not doing either now. I ended up moving from FOH to maintenance at the Inn I was at and I'm doing handyman shit now. I didn't make any claim to a Michelen star.
