I'm not sure I've ever seen someone doing this irl and I don't really see the point unless you're in the process of getting off of the bike

I am able to do this. He's got one foot firmly planted on the pedal, it's not that hard.
I used to also be able to do hands-free and standing by squeezing the bike seat between my thighs (it's impossible otherwise).
I'm a pretty talented athlete actually come to think of. I highly recommend it.

if you're just coasting a short distance it's easier than swinging your leg over the saddle. it lets you rest your ass too if you've been riding a while.

you can glide right into one of those bikestands and just hop off the bike. There's nothing really special about it, kinda like riding a bike with no hands.

It simply comes down to balance and weight distribution.
Maybe on certain kinds of bikes it's harder to do, I dunno.
But I've always been able to do it on my hybrid all-terrain style bikes.
Mechanical engineer here. This kind of trick is EXTREMELY dangerous and requires a HUGE amount of training before you even think about attempt it. Fun fact: there used to be three Wright brothers before one of them tried this.
