Are American bars really like this?

Usually things you see in movies are a bit exaggerated but every bar in the US is actually exactly like this. It was kind of like a documentary almost.

No chicks that hot as a gimmick dancing around. My local had free hotdogs and potato chips.

My local bar is sea themed despite being in a landlocked state
You can get burgers and sandwiches and so on like a normal bar but also shrimp tempura and maybe one other seafood thing on the menu.
It also has a sit-down area in the back. It's a small town and already has a real restaurant but I guess they're competing with it.
They have lunch specials and senior dining hours right before noon, I guess they are serving the retirement home.
When I go there I get a sandwich or burger with curly fries, and a jack and coke and glass of water

If you think the showrunners of GoT were actually influenced by a random bar in Portland or wherever the fuck, you're delusional. They probably don't even know that bar/crowd exists.

Spontaneously no, there are theme Coyote Ugly bars all over the country which is like Hooters but for people into the slutty cowgirl aesthetic.
