Once you get famous enough as an actor you essentially become a brand that is being watched at all times. In a normal fan interaction in public you have to put on a persona that's in line with your brand otherwise you risk getting exposed or cancelled.
I think more mid-lower level actors are genuine people because they're not constantly having to maintain a persona/brand.

Actors' jobs consist too in promoting their films, for which they need to be polite when talking with people. If you've ever worked on anything that requires you to talk with clients or whatever, you need to "act" nice even during a negative situation (a complain, someone doesn't have an appointment, etc)
So, when you see them in interviews, they're not necessarily acting, but they are acting "nice".

No, they're genuinely bad people. It's not entirely their fault, though. But they're shitty as hell and completely disconnected from the real world
