Just consume it one arc at a time. Spend the weekend going one by one, 1000 episodes seem daunting, but not so much if you simply divide them by arcs.

The Lord of the Rings didn't need every single page to tell its story, as evidenced by how the movie did a find job adapting despite cutting out so much stuff. The reason why it was 1000 pages is because Tolkien wanted it to be. That's it.

In the 80s, it was normal for a successful manga to last 4 or 5 years, then end, and the author would move on to something else. This happened with Fist of the North Star and Shueisha regretted it since it was so popular. So when other series like Dragon Ball, JoJo's Bizarre Adventure and YuYu Hakusho started making them money, they asked the authors if they could keep the series going. Dragon Ball went on a few years beyond its intended stopping point and declined in quality. The author of YuYu Hakusho told them to fuck themselves and abruptly ended the story. JoJo's Bizarre Adventure is still going right now, and thank God, since the best part of the story happened like 15-20 years into its serialization. These series, especially Dragon Ball, were a huge inspiration for new manga in the late 90s and early 00s, and their authors all got into the magazine hoping their series could last as long or longer. Nowadays, this sentiment has died out. The popular zoomer shounen (My Hero Academia, Jujutsu Kaisen, Demon Slayer) all ended in just a few hundred chapters, while One Piece is still going.

Weekly manga aren't written to be a single cohesive story. A guy doesn't show up and say, "This character shows up, does this, then this happens, and the story ends, and that's it, call me in a year to see if I have a new idea." If they were going to write something like that, it'd probably be better as a book or graphic novel. The point of a weekly manga is to be there every week for people to read. As such, there isn't any reason for it to ever end, other than a decline in readers. There is a single narrative, but it's in the background. What you really read it for is the individual story arcs which make up the whole.

To add some nuance to this:

Some mangaka don't even seem to have any story thought out at all, and only have the first 5 chapters thought out then wing it.
Some mangaka have a story thought out, but then bad ratings or editorial meddling force them to change the story drastically. Sometimes they manage to steer it into a long-running series after drastic changes, and sometimes they still get cancelled. A good example is Katekyo Hitman Reborn, which starts out as a pure gag manga and then suddenly turns into a full battle shounen (with a mostly nonsensical plot).
And then there's some mangaka who have a story thought out (probably not at the start, but at least relatively early on in its run), and then it ends but the manga continues running. I think JJK is a good example, everything after the Shibuya arc is a shitshow and it seems like nothing after it was thought of beforehand. Was there even an original plan for the Shibuya a

In all of these, One Piece is truly unique in that it has a story that was mostly sketched out from rather early on in its run, has a set endpoint is and is (very slowly) going to it over an insane amount of runtime.
