Lord of the Rings beyond a shadow of a doubt. It made concurrent trilogies viable productions. It spawned a truly MASSIVE amount of pop culture and memes. It's also just a well executed story that doesn't run out of steam at the end (The Hobbit movies notwithstanding). Game of Thrones, yeah it was popular while it was running, but it was basically immediately forgotten about after the wet fart of the last two seasons.
