When I want a smile I rewatch that episode of his show where he helped out struggling eateries but specifically the one where he goes to that spicy chicken joint ran by a Southern black woman.

No. I worked in a kitchen as a youngling and the main cook was a woman who was as angsty and intense as any army corporal. Something about being around a hot stove and having to crank out a ton of food in a short amount of time turns people feral.

Don't put frozen foods in hot oil. Instantly turns into steam and sends oil flying everywhere

It looks like he put too much oil in a sauce pan , brought it to a boil and then put french fries recently taken out of the freezer with frost crystals still on them. This caused the oil to violently react to the water on the french fries causing some spillage so the oil was contacting the burner causing a flame up. He then threw water on the grease fire making it worse.

They can be frozen they just can’t be freezer burnt and have big chunks of ice clinging to them. It also helps to use a bigger frying vessel.
