Katakuri vs Luffy was a pretty well done haki fight, it was a man to man brawl the realest test of raw power up to that point and while the powers were simple there was more going on with the character personality especially on Kata's end. Then you have Kaido which was a lot of Haki but with Gear 5 it gave Luffy a lot more to do then just change color, might sound stupid but Luffy doing a giant fist was the most in line with his early power he has done in the entire story, rubber man finally made himself even bigger and that won

the first few post TS fights were shitty, Caesar and Hody (fishman) had very little going for them. Doffy was an amazing character and the fight was made cool because he awakened his fruit and before that used it to the absolute maximum amount of creativity a string man could train himself, thats why he was good. Katakuri like I said is universally beloved because hes a great parallel to Luffy and no tricks tests Luffy's strength as far as he could go up to that point. Kaido fight was only saved by Gear 5 but for me the arc was such a slog before the fights that I was stoked for any action.

Luffy was always CQC monster, since the beginning of the series. He fucks around and falls into traps, but in direct combat he basically curbstomped everyone he faced up until Water 7. Even then it took him two hours to readjust and continue winning streak.

Same thing happened with Enel - Enel has one of the strongest observation hakis ever showcased in OP universe, which you'll get only via rigorous trsining or combat experience and Luffy basically stomped him when he was able to touch him.
